On December 10, 2025, in New Delhi, UNESCO wrote a historic page: Italian cuisine was officially inscribed on the List of the Intangible Cultural Heritage of Humanity. The first cuisine in the world to be recognized in its entirety \u2014 not for a single recipe or technique, but for everything it represents: identity, conviviality, memory, territory.
A recognition that goes far beyond the kitchen.<\/p>\n\n\n\n

UNESCO did not honor a dish. It honored a way of being together, of passing down knowledge, of respecting the seasons and the products of the land. It honored the gesture of a grandmother kneading dough, the shopping trip to the neighborhood market, the aroma of coffee in the morning.

And then there is Rome. The Eternal City brings to the table a cuisine that is humble in its origins and extraordinarily rich in character. Carbonara \u2014 eggs, guanciale, pecorino, black pepper \u2014 is perhaps the most beloved Roman dish in the world, born of simplicity and now a universal symbol. Cacio e pepe, three ingredients that seem like too few and yet say everything. Amatriciana, with its rich red sauce, the legacy of the shepherds of Lazio who centuries ago made their way down to the capital.
